History of the Metropol restaurant

The history of the Metropol restaurant begins with a small establishment of the restaurateur Nemchinsky, opened in a building built by an unknown architect at the end of the 18th century and then rebuilt in the classicist style by Adrian Robin in the classicist style in 1847.

Initially, the institution was called «Gostiny Dvor» after the name of the shopping arcade, opposite which it was located. Later, the institution was renamed «Lux». The regulars of the institution were mainly middle-class merchants and the St. Petersburg intelligentsia, also «Lux» was the most favorite institution of Grigory Rasputin.

At the beginning of the 20th century, the restaurateur who owned the establishment went bankrupt and the future Metropol was bought out by the first partnership of cooks and waiters. It is from this event that it is customary to count the history of the modern Metropolis.

In 1931, the restaurant was nationalized and named «Metropol», and one of the shops of the «Metropol» confectionery was located in the building, the products of which are still one of the best in St. Petersburg.

In Soviet times, Metropol served mainly the party elite and high-ranking guests. On the second floor of the restaurant there was a special hall for representatives of the local party elite, as well as world-class events. Leonid Ilyich Brezhnev, Ronald Reagan, Jacques Chirac and many others became guests of the restaurant during the Soviet period. Nevertheless, the products of the Metropol were also available to the common man in the street. In Leningrad, it was an indicator of status to order a banquet at the Metropol restaurant.

In 2002, the restaurant closed for restoration and reopened in 2010 under the brand name «Brasserie de Metropole». The new restaurant combines a Belgian pub with its own brewery and a restaurant complex.

The Metropol was once visited by such well-known figures of culture and politics as Emir Kusturica, Rafael Correa (President of the Republic of Ecuador), Fyodor Bondarchuk, Eduard Khil, Mikhail Boyarsky, Tatyana Bulanova, Denis Klyaver (soloist of the group «Tea for Two»), Sergey Shnurov and others .

During the pre-revolutionary and Soviet periods, the cuisine of the Metropol mainly offered Russian cuisine such as chicken cutlets, langets, kulebyaku and others.

In 2010, the Brasserie de Metropole was presented to the attention of the guests — a renovated elite restaurant with a new wedding banquet hall.

In 2016, the banquet hall was again closed for reconstruction and appeared before visitors in a new style under the name «Majestic Hall»

After the restoration in 2010, the menu of the restaurant was designed by Eric Cezzar, in which he brought the influence of Belgian, Flemish and German culinary traditions. Also in the restaurant worked such famous chefs as Enrico Begoni and Eric Thor (owner of 3 Michelin stars).

Now the chef at the Metropol restaurant is Alexei Barinov, who set the goal of restoring the restaurant to its former glory. A key feature is a fundamentally new approach to gastronomy in the form of an author’s menu. Change of the calendar and gastronomic year — like months, seasonal products replace each other, and provide guests with the opportunity to choose dishes for every taste.

«Metropol» is a Russian restaurant, and fundamentally the cuisine should be Russian. It will be like this, but with author’s notes, with some touches of modern popular trends. For example, there will be a special section with dishes that are conceptually different from the main menu in both serving and preparation. Guillaume Denayer is the Chef Brewer of the Belgian Brasserie. Mr. Denayer began his brewing career in 1992 as a teenager. He followed in the footsteps of his father, who decided to brew a honey bio-beer. In a tiny brewery in the south of Belgium, they found a brewer willing to try this new recipe with this rarely used ingredient. On this day, Guillaume realized who he would be.

In 2003, Guillaume graduated and was ready to enter the brewing profession. He tracked down a brewer he met more than 10 years ago during that same honey bio-beer brew. François Tongle, the brewer at Karakol Brewery, agreed to take him under his wing to instruct him in wood-fired brewing techniques. Wood-fired brewing is a very old method and Karakol is the last brewery in the world to still use it.

For 4 years, Guillaume has worked in all positions of the brewery: from the purchase of raw materials to the delivery of goods to the client. This versatility gave him the chance to learn a lot about brewing.

At the Metropol restaurant, you can try many different dishes, such as red caviar on ice, crab lasagna, hangover cabbage soup, tuna with asparagus and onion confiture, beef stroganoff with mashed potatoes and oyster mushrooms, and many others. And in the pub you can enjoy signature Belgian beers such as Brune, Blanche and Blond with gourmet snacks.

Restaurant at the same hotel at five in five minutes walk from Red Square. «Metropol» is located in a historic building of the Art Nouveau era. The large hall of the restaurant with a stained-glass dome is decorated in neoclassical style: bronze lamps, columns, gilded mirrors and a marble fountain in the center. The main emphasis in the «Metropol» is on breakfasts and Sunday brunches. The menu includes pancakes with salmon and red caviar, cereals with berries and honey, or homemade cakes.
