El Castillo San Felipe del Morro, también conocido como Castillo del Morro, es una fortaleza amurallada del siglo XVI ubicada en San Juan de Puerto Rico. Los colonizadores españoles la construyeron para defender a Puerto Rico de los ataques desde el mar aunque hoy en día es simplemente un lugar para visitar y pasear. Desde su muralla se consiguen unas vistas de la ciudad de San Juan fantásticas, seguramente uno de los motivos que justifican que el Morro sea una de las atracciones turísticas más visitadas de la capital de Puerto Rico. Se puede visitar por libre o con un guía y hay disponibles mapas y pequeñas guías para adentrarte en la historia de este gran monumento. Para acceder al castillo es fácil llegar andando aunque un taxi es una buena alternativa. En el año 1983 el Castillo del Morro fue declarado Patrimonio de la Humanidad por la UNESCO. Este castillo está dentro del Sitio histórico de San Juan junto con el Castillo de San Cristóbal y el Cañuelo.

Castillo San Felipe del Morro

El fuerte de la ciudad de San Juan, Puerto Rico, llamado Castillo San Felipe del Morro pertenece al siglo XVI y  su edificación intentaba tratar de proteger la ciudad de los posibles ataques provenientes del mar. El Castillo San Felipe del Morro es uno de los elementos arquitectónicos más importante de la ciudad por su significación histórica. El fuerte se mandó a construir por españoles en el siglo XVI, convirtiéndose en el edificio de mayor tamaño construidos por españoles en el nuevo mundo.

La construcción data del año 1539, donde solamente encontrábamos una torre con un diseño simple dotado con varios cañones, construída mayoritariamente con piedras y situado muy cerca del mar. En el año 1587 con la ayuda de los arquitectos Juan de Tejada y el italiano Juan Bautista Antonelli se convirtió en el fuerte militar español de la zona.

Entre el año 1601 y 1609 se intentó construir una barrera y bases para los muros que protegería de los ataques futuros. Estas mejoras no fueron suficientes ya que no aguantó ni un solo asalto. Los ingenieros comenzaron a diseñar un método más efectivo.

Finalmente, para convertirse en el Castillo de San Felipe del Morro en la actualidad, se necesito más de 200 años de construcción. Se añadieron dos hornabeque, el foso, el puente elevador y otros inmuebles. No fue hasta 1787 cuando se terminó los seis niveles que encontramos en la actualidad en la estructura de este fuerte.

El Castillo de San Felipe del Morro tiene una altura de 40 metros con murallas de hasta 7 metros de espesor. En su interior encontramos todo un cumulo de laberinto, calabozos, rampas y otras habitaciones. Su diseño arquitectónico pertenece al estilo hispanomediterráneo, usual en las construcciones de la zona durante la época.

Basándose en las órdenes del Rey Carlos III, se realizó otra serie de cambios durante el Siglo XVIII. Los encargados fue Tomas O’Daly con Alejandro O’Reiley como mariscal del campo. En esta reforma se trato de reforzar las murallas y las fortificaciones. También se amplió los bastiones y los parapetos que se hallaban en malas condiciones, se remplazaron por nuevas versiones más gruesas. También, se añadió el fuerte a prueba de bombas, un patio de práctica de tiro y un terraplén.

En el año 1843 se mando a construir encima de la ciudadela del Castillo San Felipe del Morro el Faro que se denominaría con el mismo nombre que el fuerte. Este faro no aguanto y  fue derruido en los bombardeos por Estados Unidos en el año 1898. Dicho país construiría el faro actual en 1908.

En el año 1961 el lugar donde se encuentra situado el Castillo de San Felipe del Morro fue abierto al público y considerado como un parque nacional, que se preserva como museo.

A nivel de arquitectura estamos hablando de un edificio que ha sido considerado como Sitio Histórico Nacional de San Juan y Patrimonio de la Humanidad por la Unesco. Es un edificio con historia.

Coming from a family of confectioners, Le Roux trained as a chocolatier at what was then the only confectionery school in the world, and after his studies took over the management of the family business.

Trying to stand out among other confectioners, he used salted butter, a popular product in the region, in his recipes. After extensive testing, Le Roux created a salted butter caramel that quickly became a culinary masterpiece, placing his shop on the culinary map. Today, there are many Henri Le Roux stores in France where diners can sample this early version of the salted caramel. nine0013

Despite its long history, Salted Caramel has been of great interest to Greek confectioners in recent years as it can be used in everything from sweet pastry shops to simple chocolates and waffles from a kiosk, even in yoghurts. Of course, sweet caramel has also made an appearance in drinks such as hot chocolate, coffee, and energy drinks.

But why is this salted caramel flavor so popular among consumers?

Scientists gave an explanation for this phenomenon and called it “hedonic escalation”.

Our hedonistic escalation happens when we continue to eat food and it gets better and better. Instead of getting bored over time, we like it more and more.

According to the study, this usually happens when a tasty food consists of a complex combination of tastes, and a person is able to recognize both tastes. So in the case of salted caramel, the one who tastes it can distinguish both salty and sweet taste at the same time. In addition, scientists argue that hedonic escalation can increase consumption and influence food choices. nine0013

Therefore, it is only fair that many companies are investing in new salted caramel-flavored products as consumers buy well and top their list of choices. It is a fact that the explosive combination of salty and sweet creates an impressive sensation in the consumer, making him want to try it again and again.

Salted caramel recipe

Homemade salted caramel

• Preparation time
• 10 minutes
• Cooking time
• 5 minutes

• Portions
• 1 mug

For homemade salted caramel you will need:

1. 1 cup (200 g) granulated sugar

2. 6 art. l. (90 g) salted butter, cut into 6 pieces

3. 1/2 cup (120 ml) cream

4. 1 tablespoon salt

Cooking

In a small saucepan, heat the granulated sugar over medium heat, stirring with a wooden spoon.

The sugar will stick together and turn into a thick brown liquid, you keep stirring. Be careful not to get burned.

As soon as the sugar has completely melted, immediately add the butter. Be careful at this point because the caramel will froth up as soon as the butter is added. nine0013

Blend butter and caramel until completely melted, about 2-3 minutes.

Very slowly add 1/2 cup of cream and stir at the same time. Since the cream will be colder than the caramel, the mixture will immediately froth and splatter.

Let the mixture boil for 1 minute. As it boils, it will begin to rise.

Remove from heat and add 1 tablespoon salt. Make sure the mixture is cold before using. nine0013

Tip:

You can also use unsalted butter, although salted butter is preferable.

Use cream with 36% fat.

Avoid doubling or tripling the recipe. Excess mass will not allow sugar to melt properly and evenly. It is better to run the recipe a second and third time if you want to cook a larger volume.
