How BACARDÍ rum was created

THE BACARDÍ STORY

On February 4, 1862, Don Facundo Bacardí Massó purchased the first BACARDÍ rum distillery on El Matadero Street, in the town of Santiago de Cuba, for 3,500 pesos. Here, he pioneered a new way of making rum that would change the way rum was made forever.

Don Facundo realized that early rums were crude and harsh and not fit for the cultivated palettes of Cuba’s emerging middle classes. He set out to create a locally produced spirit that was as sophisticated as the finest cognacs. He began with the highest quality ingredients including a unique strain of yeast which he found growing in the sugarcane fields outside Santiago de Cuba. This proprietary strain of yeast became known as ‘La Levadura BACARDÍ’ and continues to be used exclusively to provide BACARDÍ rum with its unique flavor profile.

INSPIRING NEW TECHNIQUES

THE BACARDÍ STORY

In order to create a light and well-balanced rum, Don Facundo distilled two separate spirits. The first distillate was known as ‘aguardiente’, a characterful rum with a distinct flavor and aroma that provides the backbone for BACARDÍ; the second he distilled several times to produce a lighter and more delicate spirit called ‘redestilado’. By blending these two distillates together, Don Facundo was able to achieve the perfect balance of flavors and create a rum the world had never seen before.

GENERATIONS OF INNOVATIVE SPIRIT

THE BACARDÍ STORY

By pioneering charcoal filtration and purposeful ageing in rum, he created tools that our Maestros de Ron BACARDÍ (Master Blenders) continue to use today to create a range of perfectly balanced rums; each with its own interpretation of the BACARDÍ flavor profile.

Seven generations of Don Facundo’s family have sustained his innovative spirit to produce BACARDÍ, the most awarded rum in the world.

The most delicious rum, or the success story of a Spanish migrant in Cuba

Cuba

Elizaveta Petrova

This is the second time I’ve been to Sitges in a year. In March, I was at the carnival, which I wrote about in one of my articles. In July, I went to this small cozy town not only for the magnificent beaches and bronze tan. I was interested in the rum museum “La casa museo de Bacardi en Sitges”. Rum is one of my favorite drinks!

Three years of life in Cuba made themselves felt. Cocktails “Mojito” and “Cubalibre” are an excellent choice in the heat. They invigorate and perfectly quench your thirst. If you are a rum lover, especially the Bacardi brand, and are relaxing in Sitges, then I advise you to visit “La casa museo de Bacardi en Sitges”. The museum itself is quite small, but quite interesting. Entrance costs 12 euros.

The price includes a guided tour of the main halls of the museum. You will learn the history of the brand and how rum is made. You will be taught how to taste the drink, and they will also hold a master class on making the most famous Mojito and Cubalibre cocktails. After the tour, you can make and drink a cocktail yourself.

“La casa museo de Bacardi en Sitges”

Bacardi. The story behind the making of a world famous brand

The Bacardi family hailed from Sitges. At 19century they moved to Cuba. The Mine brothers Juan Jose and Facundo decided to open a small shop in the town of Santiago.

Facundo (Facundo Bacardí Massó) and his wife saved up money and opened their own business, the liquor store Facundo Bacardí and Company. Business began to develop and things went uphill.

But in 1852 disaster struck. The earthquake destroyed the city. Facundo brought his family back to Spain, while he returned to Cuba to establish a business. But the empty city, almost extinct after the disaster, did not bring money and the store had to be closed. During these difficult times, the former entrepreneur returned to work for his brother José.

Facundo Bacardí Massó

Another important and pleasant event took place during these years: Cuba became the main sugar monopoly in the Caribbean. Sugar cane is grown on the island.

In the Spanish colonies, in the Caribbean, rum was not made. In Madrid, the government stops the export of alcoholic beverages. Emperor Charles II banned the production of rum in the colonies of Spain, in order to protect the Spanish cognac industry.

In addition, at that time the main consumers of rum were the working class and pirates. This liquor was scalding, pungent and poorly processed. And Facundo Bacardi had the idea to introduce a fashion for the consumption of rum among the elite.

Facundo understood that he needed special equipment to produce liquor, which he did not have. In principle, such a device was difficult to acquire in Cuba. French entrepreneur Jose Leon Bouteller was engaged in the production of cognac and sweets. Facundo entered into an agreement with him, according to which he would be able to use his equipment for the production of rum. It took Facundo a whole 10 years of painstaking work to create his own unique rum.

The founder of the company, together with his business partner Buteller, developed a unique technology for the production, purification and aging of rum from molasses (fodder dark brown molasses, a sugar product from cane). This technology not only significantly improved the quality of the drink, but was also relatively cheap. A few words about technology…

Rum production technology

At the museum they gave us a taste of molasses. The taste of molasses is bittersweet and cloying. In addition, we tasted rum. Before tasting the drink, warm the bottom of the glass a little in your hand. Thus, the drink will begin to reveal its aroma. White rum is added a little to the hands and rubbed in the palms. Then you need to inhale the aroma. Thus, the heart of the drink is felt. A good white rum smells different for everyone. I smelled the aroma of coconut oil and fresh herbs, hints of vanilla and almonds. All this palette brought back warm memories of the days spent in Cuba.

The latest invention was the aging of alcohol in white American oak barrels. Dark, aged rum has an oak barrel aroma.

And now we are returning to history …

As a result of the experimenters, as a result, the experimenters have created an amazing rum, which loved not only simple people, but in love and the upper strata of society appreciated its taste. In 1862, production was established. The Bacardi brand has been officially registered. Over the years, a small factory has turned into a whole empire that makes rum.

Real Bacardi is made from sugar cane. Only the lower part of the plant is needed. It is rich in essential sugars. The cane is harvested by hand. This is done in order to select only the highest quality and most suitable reed specimens. Only women are allowed to sort raw materials, as they show more attention to each branch. At the enterprise, the cane is checked and passed through a press several times and all the juice is squeezed out. After fermentation, the liquid is distilled twice. The result is an 80% colorless distillate. It is he who forms the basis of any Bacardi rum.

To refine and soften the taste, Bacardi used charcoal obtained from tropical trees and coconut shells. Soon the company took one of the first places in the production of aged, elite spirits.

As a result, Bacardi managed to realize his plan. White rum was inexpensive for workers, peasants, sailors and other middle strata of the population. Aged dark rum in American oak barrels became popular among the wealthy. It was something completely new in alcoholic production. Rum had an exceptional taste. Bacardi became the first producer of light rum in the world.

Bacardi logos

Once a family friend gave the founder of the company a palm tree. Facundo Bacardi’s son put her in front of the factory. With the growth of profits and the enrichment of the brand, the palm tree also grew. It was this tree that became a certain symbol of the wealth of success and prosperity of the Bacardi family business. In addition, the palm tree meant fruitful cooperation with Cuba and the Caribbean region. People began to say that the Bacardi company would enrich and grow until the moment the tree lived.

By the beginning of the 20th century, the owners decided to demolish the old small building and build a new, large factory. The palm tree continued to grow. It has survived natural disasters (hurricanes and storms), which are especially common in tropical climates.

In the late 50s of the 20th century, the palm tree began to wither, it was then that Fidel Castro came to power in Cuba. The new government did not favor private entrepreneurs and small businesses. Castro issued a law prohibiting private property. The Bacardi factory was closed. The family had to move to the USA. However, the secret technology and the family recipe for making rum miraculously managed to be preserved.

The palm tree withered and died. But the tradition has survived. And now the palm tree is one of the symbols of the brand. Wherever a factory, office or brand museum is erected, a coconut tree is planted or displayed as a symbol. The Bacardi Museum in Sitges also has such a palm tree.

***

At the time of the company’s prosperity, most of the Cuban population was illiterate. No one really wanted to understand what is written on the bottle. The brand needed to be given a memorable logo that customers would easily recognize. One day, Facundo’s wife came to the factory and saw bats on the roofs. In Spanish culture, the bat symbolizes wealth, fidelity and health. It was the perfect logo to attract the consumer. In addition, bats are of great benefit in the cultivation of sugar cane. They prey on insects that eat this plant. The wife suggested a bat as a symbol.

Symbols of different years

As the owners expected, during the growth and development of the company, few read and understood the inscriptions on the bottles. The people called the drink “Bat Rum”.

The United States has played a huge role in the development and development of the Bacardi brand. In 1919, Prohibition was passed in the United States. The sale and production of alcohol were banned. Facundo, as a talented entrepreneur, cleverly took advantage of this situation. Rum in Cuba was produced and flowed like a river. The flight from the US was relatively cheap.
