Serra da Estrela cheese is one of the best varieties of Portuguese – and the oldest known. Perhaps this cheese can be called the same age as Portugal itself. For its production in the Serra da Estrela mountains, the milk of sheep of the elite Serra da Estrela and Churra Mondegueira breeds is used. Real “estrel” cheese does not happen much. This is its uniqueness: the lack of mass production, the limited region and, of course, incredible taste.

Cheese starts from the meadow. After all, its taste depends on what herbs the sheep ate, which gave milk to it. Therefore, the shepherd carefully chooses where to graze his flock, trying to avoid plants that can impair the taste and quality of milk. Feed additives are excluded – only natural, environmentally friendly herbs. At the end of the day, when the herds return to the farms, the sheep are milked and fresh milk is immediately sent to the cheese dairy. Previously, only women were traditionally engaged in making cheese – usually they were the wives and daughters of shepherds, who passed on the secrets of craftsmanship from generation to generation. Gourmets claim that the secret of the unique taste of Serra da Estrela cheese lies in the warmth of the women’s hands that made it. In our time, men were allowed to cook, but until now, the production of estrel cheese is a symbol of resistance against “mass production” and the pride of every family involved in its production.

Authentic Estrel cheese is produced in winter, from late October to early April. One of the most important ingredients added to milk in the preparation of cheese are the flowers of the local thistle – in Latin Cynara Cardunculus. The flowers are dried, crushed and mixed with milk. The resulting mixture is infused at a temperature of 29 degrees for 1 hour.

The curd mass obtained after curdling and separating the whey is kneaded by hand and laid out in cylindrical moulds. The molds are compressed with a mechanical press to remove whey residue and the cheese is sent to cool. The temperature of proper maturation of cheese should be kept between +6 and +14 degrees. Then the cheese heads are cooled, removed from the molds and wrapped with a strip of cloth. Almost finished cheese is aged in old traditional cheese dairies, typical of the region and built from local granite. The cheese ripening time is from 40 to 120 days, depending on the manufacturer’s recipe. The weight of one head of cheese ranges from 700 grams to 1.7 kilograms.

At the output we get a young cheese – soft, with an oily white filling and a yellowish rind, surrounded by a strip of fabric.

Over time, the cheese matures and turns into a hard, mature cheese – curado.

Personally, I prefer young cheese. It is very tasty to eat it with a spoon with fresh rustic bread.

For a sweet dessert dish, add a little port wine or honey to an open head of cheese. And for a full meal, some chefs add rice with various additives to the cheese.

The capital of Estrel cheese is the small village of Celorico da Beira, located near the town of Guarda in the Mondego river valley. This valley is famous for its excellent microclimate, most suitable for the ripening of the most delicious cheese.

The geographical area of production of this cheese covers the areas of Carregal do Sal, Celorico da Beira, Fornos de Algodres, Gouveia, Mangualde, Manteigas, Nelas, Oliveira do Hospital, Penalva do Castelo e Seia. There are also suitable conditions for the production of cheese in some villages in the fregesias of Aguiar da Beira, Arganil, Covilhã, Guarda, Tábua, Tondela, Trancoso e Viseu.
