Para esta receta me inspiré en mi marido, ya que él es súper fan de los flanes y hace muchísimo tiempo que no hacía, además de que consideré que no tenía muchas recetas de flanes en el blog. Pretendo hacer varios flanes más de otros sabores, pero para empezar les traigo el clásico de vainilla. Recuerden que lo más importante es la cocción del flan que debe ir a baño maría, o sea sobre una fuente con agua. Lo otro es que pueden hacerlo en potes individuales o en uno grande.
Con el caramelo deben tener paciencia y mucho cuidado, no es tan difícil como lo pintan, solo deben seguir bien las indicaciones. Recuerden que hay algunas variantes en las recetas.
Filtrar la mezcla siempre es más óptimo para tener una mezcla limpia sin resto de huevo.
El flan de vainilla, un postre delicioso que siempre debe mantener refrigerado, y que al momento de servir puede darle el toque de alguna fruta cítrica o alguna berry.

- 1/2 taza de azúcar granulada
- 60 ml de agua
- 2 huevos
- 4 yemas de huevo
- 1/2 taza de azúcar más
- 1 cucharadita de extracto de vainilla
- 1/2 litro de leche
- Precalentar el horno a 350°F (180°C).
- Preparar el caramelo en un olla con los 60 ml de agua y 1/2 taza de azúcar. Debe esperar que el agua se evapore, y que el azúcar comience a cocinarse hasta lograr un color café claro. Debe tener mucho cuidado de no tocar el caramelo con las manos y de tener paciencia en la cocción. Tampoco es necesario revolver, pero puede ir moviendo la olla un poco. Cocine a fuego medio bajo.
- Una vez listo el caramelo esparcelo con mucho cuidado sobre los moldes individuales como se aprecia en la foto.
- Luego caliente la leche en una olla. Mientras tanto en un bol batir los huevos, yemas, 1/2 taza de azúcar y vainilla. Agregar la leche caliente. Revolver bien y luego pasar la mezcla por un colador y recién allí pasarla a los moldes.
- Poner los moldes dentro de una fuente con agua fría (baño maría), Llevar al horno por unos 50 minutos.
- Dejar enfríar los flanes dentro de los mismo moldes. Puede hacer esta preparación la noche anterior y dejar reposar dentro del refrigerador.
- Luego colocar un plato de postre encima y dé la vuelta al molde. Levántelo y dejar que el caramelo bañe el flan.

Se trata de uno de los postres preferidos para todos. El flan es un postre muy sencillo de hacer, que tiene, además, múltiples versiones: Flan de huevo, de café, de chocolate, con nata…¡y de vainilla!
En esta ocasión haremos este último tipo. El flan de vainilla es un plato delicioso y muy dulce, ideal para desayunos, meriendas y postres. Además, como ya dijimos en anteriores recetas, el flan tiene muchas menos calorías de las que pueda parecer en un principio…¡no te prives de él!
Ingredientes para 4 personas
Para el flan
- Leche- 250 ml.
- Azúcar- 50 gr.
- Huevos- 2 unidades
- Esencia de vainilla o azúcar vainillado
Para el caramelo
- Azúcar- 50 gr.
- Agua
Cómo hacer la receta de Flan de vainilla
- Comenzamos templando la leche y echándola en un bol. Añadimos el azúcar y mezclamos hasta que se disuelvan. Incorporamos los huevos y la esencia o el azúcar de vainilla. Mezclamos hasta conseguir una mezcla homogénea.
- Llega el momento de hacer el caramelo. Para ello, echamos los 50 gr. de azúcar en un cazo e incorporamos tres cucharadas de agua. Ponemos al fuego y vamos removiendo de vez en cuando. Cuando la mezcla adquiera un color dorado, vertemos el caramelo en el molde del flan.
- Echamos la mezcla del flan en el molde y lo colocamos todo en una olla express con un poco de agua. Tapamos la flanera con un plato y ponemos la tapa a la olla. Encendemos el fuego. Cuando hayan subido los indicadores de la olla, bajamos el fuego y lo dejamos tres minutos. Tras ésto, retiramos del fuego y abrimos la olla cuando se pueda.
- Cuando puedas abrir la olla, sacamos el flan y dejamos templar al aire. Cuando se haya enfriado un poco, tapamos con papel de aluminio y lo metemos en el frigorífico durante, al menos, 5 horas.
- Pasado ese tiempo, sacamos el flan del frigorífico, desmoldamos. ..¡y a disfrutar!
Notas y Consejos
Si no tienes olla express también puedes hacer esta receta, pero tardarás más. Deberás dejarlo al fuego durante una hora aproximadamente.

2 Pour sugar into milk and add vanilla pods and seeds (or vanilla sugar) and heat until it dissolves (but do not bring to a boil: so that later the eggs do not curdle).
3Pour the milk into the egg mixture in a thin stream, whisking constantly.
4Prepare the caramel: Melt the sugar in a saucepan, stirring constantly, until a firm caramel color is obtained. Add water (necessarily warm), butter and liquor, mix well and bring to a thickening.
5Pour and distribute the caramel into individual portion molds (muffin/cake/rum babo molds work well). Pour in the egg-milk mixture.
6 Cook in a water bath in an oven preheated to 200 degrees for 1 hour.

Vanilla pods can be replaced with vanilla sugar or vanillin if needed, but the dessert will lose its taste. You can choose the liquor to your liking – I used both Amaretto and Crema Catalana, or you can completely refuse it, replacing it with warm water.

Today I want to share with you a French flan recipe that I was asked to http://velelens. livejournal.com/
I hope you enjoy the recipe and want to treat yourself and your loved ones to it.
To be honest, this is the first time I’ve made flan, as flan is usually sold in boulangerries along with croissants and other French pastries. It can be of several types: natural with prunes, with apricot, coconut or chocolate. My favorite is coconut, but this time I’m giving you the recipe for a regular vanilla flavored flan. I love vanilla flan. Vanilla gives a delicate fragrant smell, and cheerful black dots appear on the dough itself thanks to vanilla seeds. If you didn’t have vanilla, or you don’t like it, then you can easily cook this recipe without vanilla. Vanilla pod can be substituted for vanilla sugar (put 2 sachets of vanilla sugar into the dough) or add a couple of drops of vanilla extract to the dough.
The pod should not be thin. If it is thin, then it means dry, and there are fewer seeds in it. A real pod should be thick and oily. When you pick up the pod, it should leave a light greasy print on your fingers. This indicates that the vanilla is fresh. I managed to buy such vanilla on the island of Mauritius where it grows. I bought about 20-30 pods. They explained to me how to store fresh vanilla beans. We take the pods and pack them in baking paper, wrap them in a bag and put them in a jar with an airtight lid. As you understand, neither moisture nor light should penetrate into vanilla. I keep this jar in my closet. And believe me, it’s been 2 years since my trip to Mauritius, and vanilla pods are still fresh and fat.
Tip: Make the flan ahead of time as it needs to rest in the fridge for a couple of hours. It is always served cold.
Let’s move on to the recipe itself, calculated for 6-8 servings.
We will need:

How to cook:
Put the dough on the bottom of the mold. Lubricate the baking dish with butter and sprinkle with flour. Pierce the dough with a fork in several places.
Cut the vanilla pod lengthwise with a sharp knife and carefully remove the vanilla seeds with the non-sharp side of the knife.
Place the vanilla seeds in a saucepan with milk. We put the milk on the fire and bring it to a warm consistency.
Meanwhile, mix eggs and sugar in a bowl. Then add starch. Mix so that there are no lumps.
As our milk is warm, remove it from it and gradually pour it into the eggs. Constantly stir whisks.
Then take the milk and eggs and pour this mixture into a saucepan, which we put on a slow fire. Constantly stirring the whisks, cook this mixture over low heat for 3-4 minutes so that the mixture thickens a little.
When the mixture thickens, remove it from the heat and pour it over the dough.
Place the flan in a preheated oven at 180 degrees and bake for 40 minutes.
Take the flan out of the oven, let it cool down and put it in the refrigerator for a couple of hours.
