A long-term restaurant has opened in Yekaterinburg, which was created for four whole years. We are talking about an institution on the third floor of the Europe shopping center. A large room here has been covered with a banner reading “A new restaurant will be here soon” for many years. But in November 2022, the veil was finally lifted. E1.RU correspondents were among the first to get to the new place and tasted the menu. Let’s talk about what they eat here.
The name of the restaurant is Shavi Lomi. From the Georgian language, this word is translated as “Black Lion”. But you don’t need to know the translation in order to understand what is at stake: at the very entrance, guests are greeted by a large wooden sculpture.

The name for the new establishment was chosen by the owner of CENTER francising, restaurateur Kirill Shlaen. “Shavi Lomi” is his joint project with the “Europe” shopping center.
— Initially, the restaurant was planned to be Georgian. Design began in 2018 and the Shavi Lomi name was registered in 2019. As a result, we decided that the restaurant would become pan-Caucasian – it would combine dishes of Georgian, Armenian and Azerbaijani cuisine, which we love the most in Yekaterinburg, – says Kirill Shlaen. – The project is joint, the investor was the Europe shopping center and we ourselves, we will keep the exact figure a secret, but we expect a payback within five years.
Mikhail Arakelov, familiar to many from Si, Mechty, Goji, OVO izakaya, became the brand chef of the project. Now he works in three more CENTER francising restaurants.
— Honestly, this is the most difficult project in my career. So much strength and energy goes here, – says Mikhail Arakelov. – We worked out the kitchen for two months: we cooked, tasted. It happened that the dish passed the tasting only from the seventh time. We changed recipes, tastes, combinations, read literature, how these dishes were prepared in ancient times. Because this food must taste 100%, it must conquer.
CENTER francising is a management company that unites the restaurants Agon BBQ Ratskeller, Double Grill & Bar, Carbonara, OVO izakaya, Big Georgian, MOST and others in Yekaterinburg.

The company announced a new project back in October – a sculpture of a man with a lion’s head appeared on the balcony of the Europa shopping center. True, not everyone understood the hint then – some took the installation for a Halloween decoration. It turned out that this balcony is part of a large hall in a new restaurant. It is separated from the guests by carved shutters, through which a view of the city administration, Weiner Street and the Passage opens.
The restaurant “Shavi Lomi” has 170 seats, it has become the largest in the shopping center. For comparison: the neighboring Carbonara has 120 seats. But this scale cannot be compared with the “Big Georgian” – there, taking into account the greenhouse and the “Birds”, more than 300 guests will fit in.

The basis is Georgian cuisine. Here you can order khachapuri and khinkali, there is even “Tsar-khinkal”, inside which five small khinkali with lamb are hidden.
— When we started working on Shavi Lomi, we thought for a long time what would distinguish us from other restaurants in the city, — Mikhail Arakelov explains. – Then I thought that I had not met pan-Caucasian cuisine in Yekaterinburg. It combines different cuisines. We took a piece from Georgia, Ossetia, Armenia, Azerbaijan. There are even elements of Greek, Israeli and Lebanese cuisine.

Cuisines of Georgia and the Caucasus suggest a rich taste of dishes and an abundance of spices. To match, products for the restaurant were searched throughout Russia and the CIS countries. So, fresh cheeses and dairy products began to be purchased from farmers in the Urals, lamb from Dagestan, spices from Georgia and Armenia, and tomatoes from Azerbaijan.
For those who want to try everything at once, an assortment of spreads has been added to the menu. Here are Georgian Sacilia, Armenian baked eggplant mutabal, muhamara (grated roasted red peppers) from Syria, Israeli chickpea-based hummus and Greek tzatziki yogurt sauce with mint, dill and olive oil. They serve an appetizer with airy pita.

Mikhail Arakelov has added several dishes to the menu, which are prepared according to signature family recipes. For example, watermelon peel jam is cooked the way his grandmother once did. A secret ingredient, cognac, is added to minced meat for dolma, it makes the structure of minced meat more interesting. And here you can also try dogwood compote, which the team managed to prepare before the opening.
The confectioners were also able to surprise the guests. Here they developed a huge cake “Napoleon”, which is prepared for a company of six people.

The feature of the bar’s menu is coffee brewed in the sand. For him, a special machine was bought in the restaurant, coffee for it has to be ground manually – for each cup, about 135 turns of the coffee grinder handle are made. But then, they assure, such a drink has a special energy – and it will be possible to guess from the coffee grounds. Espresso is served in handmade mugs, like most plates: they were brought to the Urals from Georgia, where they were made to order for Shavi Lomi.
The wine list was also made up of products from the Caucasus and Transcaucasia. The chief sommelier Alexey Dubovkin worked on it. The menu includes pomegranate and grape wines. The map shows Armenia, Georgia and Russia.

restaurant on two floors. On the second floor there is a bright attic with a glass ceiling and a view of the center of Yekaterinburg. In the summer, they plan to open a terrace here. In the meantime, figures of highlanders and Christmas trees made of wood have been installed on it.
The large hall of the attic is drowning in greenery. There are dozens of pots with fresh flowers here. Special staff had to be hired to take care of them. But the costs were definitely worth it – the atmosphere in this place is special.

within walls built in the 19th century. There is an eight-meter ceiling with wooden beams. A spiral staircase leads upstairs, under which you can find entrances to three private rooms: a small one, a fireplace room and a hall with a clock, they are designed for 6-10 guests.

Share6 All furniture for the restaurant was made
in private workshops in Yekaterinburg based on sketches by designer Yulia Ionova-Logua. The wooden tables were made from hundred-year-old pine boards, Kirill Shlaen says that for this they had to buy out the old house.
Fur teddy chairs (reminiscent of teddy bears) made for Shavi Lomi had already become an exhibit at the Moscow Museum of Modern Art even before the opening of the restaurant.
