A traditional Catalan dish, also known as Saint Joseph cream. The base is milk, eggs and sugar, while lemon is optional, but it really adorns this dessert.

Preparation Instructions

1 Distribute protein from yolks. In a mixer or by hand, beat the yolks with sugar until the mass turns white.
Cheat Sheet How to separate egg whites from yolks
2 Transfer the mixture to a saucepan, add milk, cornstarch, cinnamon stick and lemon zest. Heat slowly, stirring constantly, until the mixture thickens. Remove from fire immediately.
Tool Saucepan
3It is important not to overcook the cream: as soon as the mass becomes dense and resistance is felt when stirring, the cream must be removed from the heat, otherwise it will curdle or delaminate.
4Remove the cinnamon stick and pour the cream into the ramekins. Let cool and put in the refrigerator for 2-3 hours.
5 Sprinkle the hardened cream with sugar and burn with a burner until crisp, like creme brulee. Warm under the grill for 10 minutes. Serve immediately.

Powder can also be caramelized. But from experience, next time I will make it myself in a sugar coffee grinder. Purchased Haas contains, for some reason, for some reason, STARCH! And we almost killed the whole dessert by sprinkling it with such powder.

Marina Malkova November 9, 2020 I would cut it at least one and a half times. And about the zest … In Spain, when they ate this dessert, it seemed to me that Catalana cream does not have such a pronounced lemon taste 9Ol000 •Ukrainian cuisine

Pop Popular Spanish Desserts in Barcelona
The words “sweets” and “Spain” immediately come to mind turron. Apart from the turron, Spain can offer a much more extensive dessert menu for those with a sweet tooth. We have collected all the names and descriptions of desserts from all regions of Spain, but absolutely all of them can be tasted in Barcelona in any coffee shop and panaderia (bread shop).
Bunuelos – are pastries, similar in texture to donuts of non-traditional shape. Round, deep fried and most often filled with chocolate. Bunuelos season begins at the end of October, they are sold by All Saints’ Day in all coffee shops and pastry shops.
Churros and porras are equally popular in South America and Spain. Only in Spain, deep-fried choux pastry in the form of “tails” is served with hot chocolate. If you buy them not in a cafe, but on the street, in special trading trailers, then you will be offered to sprinkle them with cinnamon and sugar and serve them in a huge paper cone. In Madrid, porras and churros are served for breakfast with coffee with milk. And for the sweet tooth and gourmets in Barcelona there are many places with churros with fillings: nutella, caramel, chocolate and much more. One of the most popular “churrerias” is located next to the Sagrada Familia, at Plaça de la Sagrada Família, 26.
Creme Catalana will appeal to lovers of puddings and desserts with creme brulee textures. Actually, this Catalan dessert is a variation of the French creme brulee. England, France and Spain compete for the championship in creating a popular dessert. One of the fundamental differences between the Spanish catalan cream is a more delicate texture.
Flan – A caramel flan pudding called flan has almost the same airy texture. It is prepared in the same way in all regions of Spain. This dessert can also be compared to French creme brulee, but there is one difference – the caramel is on the bottom and remains soft, and does not freeze on top in the form of a sugar crust.
Tarta de Santiago. The love for almonds and their popular cultivation in Spain inspired the Spaniards to bake an almond biscuit cake, which is commonly called “tarta de almendras” (Spanish: almond cake). The birthplace of this pie is the capital of the region of Galicia – Santiago de Compostela. It is customary to decorate dessert with an image of a knight’s cross made of powdered sugar, which recalls the old days of this region of Spain.
Coca de San Juan is also made in the form of a biscuit, but topped with marmalade and fruit, usually orange slices. The sweet cake has a rectangular shape with rounded edges and is sold for the San Juan festival, which takes place in Catalonia at the end of June, in honor of the beginning of the calendar summer.
Polvoron is generally an Arabic dessert, but today it is considered to be an Andalusian Christmas sweet, which is sold everywhere in Spain. It is worth considering that the Moors ruled the south of Spain for a long time and the popularity of this dessert in the national cuisine of the region can be considered a tribute to the historical past. Polvoron is a biscuit with a sandy-airy texture that instantly crumbles in your mouth. It is made from almonds, cinnamon, sesame, though using pork fat. You can meet them from mid-November to March in all grocery stores.
Cabello de angel means “angel’s hair” in Spanish and is a dessert in the form of a puff pastry topped with a green Mediterranean pumpkin. Often you can also find a puff stuffed with this jam. They are sold in almost any confectionery and panaderia.
Ensamaidas is a sweet pastry made from airy puff pastry and is the national pastry of the island of Mallorca. It can sell different sizes, from medium sizes comparable to a croissant, to giant sizes for puff pastry lovers.
