Aged Key West Raw and Unfiltered Rum

 

Details- We use Brand new American Oak Barrels{ we never use barrels that have had other whiskeys or bourbons in them)  with a number 3 char inside the barrel. We take the new barrel down the street to the ocean and fill it with fresh seawater. After the barrel swells overnight, we drain out the ocean water and let it cure{ dry out}. This removes all the fresh water and leaves a salt residual that opens the pores of the wood letting it age better and removes the good flavors from the wood into the rum. We also notice a Ph change after 1 year that smooths the rum out even more. You get a flavorful aged rum with notes of fig, plum, and vanilla and finishes with a pepper-like taste in the mouth from the magnesium in the salt. It is a one of a kind rum that represents the Key West Style thats now become famous world wide.

La Rhumerie de Chamarel rum distillery, Chamarel, Mauritius Island

The town with the sonorous French name of Chamarel has long been one of the main attractions of Mauritius, a must-see. Seven-colored lands, a picturesque waterfall, thickets of pineapples and palm trees, from the pulp of which they prepare the well-known “millionaire’s salad” on the island. Another relatively young landmark of Chamarel is the rum factory La Rhumerie de Chamarel 9, opened in 2008. 0004 . This plant belongs to the French-Mauritian family, which owns all the land in the vicinity.

Let me tell you an incredible fact, but until recently sugar cane juice , which accounts for 90% of all cultivated land in Mauritius, was forbidden to produce anything other than sugar . Transferring such a valuable product, according to the authorities, to banal rum was unacceptable. Therefore, all the waste products of sugar production – molasses (or molasses) – simply went to the preparation of this strong drink. Therefore, the quality of almost all the rum previously produced in Mauritius left much to be desired. Only double-distilled rum under the Green Island brand could boast of quality. nine0005

As soon as the laws of Mauritius began to allow the use of sugar cane juice for the production of rum, enterprising people, in fact, organized the La Rhumerie de Chamarel factory, revolutionizing the production technology of this hot drink. Today, there is no drink equal to rum from Chamarel in Mauritius! The distillation of pure sugarcane juice allows the rum to retain a pleasant taste and aroma.

Mauritius’s ideal sugar cane climate, with only four hours between harvest and processing, modern eco-friendly extraction, fermentation and distillation technologies make this rum so special. The cake (bagas) obtained after pressing the cane is burned to generate electricity, the ashes are used for fertilizer, the condensate is used for irrigation, and the smoke and harmful fumes are neutralized. nine0005

La Rhumerie de Chamarel produces several varieties of rums and liqueurs :

  • Premium White Rum (Premium White Rum) is ideal for making cocktails. Fortress 42%.
  • Specially aged rum (Rum VSOP) – aged for four years in oak barrels, fine and balanced, with hints of vanilla, fruit and hay. Fortress 44%. nine0032
  • Double Distilled Rum – produced using the same technology as cognac, starting with double distillation, ending with many years of aging in oak barrels. The first batch of such rum was laid in 2008. This variety of rum has a rich taste and light aroma with smoky notes, which will be appreciated by the most fastidious lovers of hard alcohol. Rum production in Chamarel is based on the principles of sustainability and zero waste. The sugar cane remaining in the process of squeezing is not thrown away, but is used as fertilizer for local orchards. The main crop cultivated on the island is sugarcane. Sugarcane plantations in Mauritius occupy most of the flat areas. Sugar and rum are produced from cane. The Dutch began to cultivate sugar cane on the island, and the technology for the production of rum also came from them. nine0005

Rum produced in Mauritius can be divided into two types: agricultural rum and industrial rum. Mauritius is one of the few countries where the production of both agricultural and industrial rum is practiced. Rum is imported from three factories in the country. Two of them produce industrial rum and one – agricultural.

Industrial or industrial rum is a cheap rum produced from the waste products of cane sugar (molasses). The raw materials remaining in the production of sugar are not thrown away, but fermented and cane alcohol is obtained from it. The alcohol is then distilled into industrial rum. Agricultural or agricultural rum (agricol rhum) is made only from quality raw materials. No production waste, only sugar cane!

  • GOLD RUM – ABV 42 degrees, minimum aging 18 months (in oak barrels)
  • DOUBLE DISTILLED RUM – a strength of 44 degrees, rum made by double distillation (cognac is made using a similar technology)
  • PREMIUM WHITE RUM – 42 degrees ABV
