Arroz Blanco (Puerto Rican White Rice)

Arroz Blanco (Puerto Rican White Rice) is delicious, fluffy and perfect with any meal.  Flavored with crispy ‘”tocino” (pork fat).  If you’re a Vegetarian just simply exclude the pork fat.

What’s great about white rice?!  Well of course EVERYTHING!!

White rice is the king of all rice dishes because it just goes with so many meals!

This Arroz Blanco (Puerto Rican White Rice) will become one of your favorite ways to cook white rice.  It is so flavorful and so simple to make, you will never go wrong with this Puerto Rican Rice. 

It is such a basic rice dish but one I certainly can’t do without!

Not to mention, it is so easy to make and done in under an hour.

Puerto Rican Rice Ingredients

This authentic Arroz Blanco is made with medium grain or short grain rice.

No long grain rice here!

But if you prefer long grain rice, feel free to use long grain.

Note: DO NOT use parboiled rice or instant rice.  Arroz blanco is made from scratch and cannot be made with premade rice.


2 cups medium grain rice

2 ¾ cups of water

2 tablespoons of vegetable oil

1/4 cup tocino (pork fat also known as fatback)

2 teaspoons of salt

Note:  If you are Vegetarian, simply exclude the pork fat.

How to Cook Puerto Rican White Rice

*****VERY IMPORTANT TO COOKING PUERTO RICAN RICE*****

Key to making any Puerto Rican rice is to use a “caldero” (Puerto Rican Rice Pot) or a cooking cauldron.  A caldero is made of cast iron and allows the rice to cook uniform and also creates a crispy bottom layer to caldero known as “pegao.”  Do not use a non stick saucepan to make Puerto Rican rice as it will not cook the same at all.  If you do not have a caldero, use a dutch oven instead.


Cut the tocino (pork fat) into one inch cubes or sections.

In a caldero (or dutch oven) over medium heat, add the oil and tocino and cook for about 8 minutes, stirring with a large spoon in between cooking time.

It will start to get nice and crispy and all kinds of yummy.

Carefully add the water and salt to the caldero and bring to a boil.


While water is boiling rinse the two cups of white rice in water until the water runs pretty clear, about 3 rinses.

(This removes the talc coating “peril” that helps preserve the rice)

Add the rice to the pot and stir with a large spoon.

*TIP:  You know you have added enough water to rice when a large spoon is almost fully covered by the liquid in pot.

Cook rice for about 5 minutes on high heat until water has almost completely dried out.

Stir rice with a large spoon, cover immediately with a lid and lower heat to medium low.

(Do not worry about the “pegao” that has built on the bottom of the pan, avoid stirring so hard as to remove pegao from bottom, we do not want the pegao to be distributed into the rice)  Cook for 15 minutes on medium low.

(Note:  Once you have stirred and covered rice DO NOT REMOVE lid to check on rice until it is time to check on it again or rice will stun and remain hard grain and pretty much never cook the right way!)

After 15 minutes, remove lid and stir again (rice will be even drier now, which is good!), cover pot and cook for another 15 minutes.

Remove lid and stir again.  Rice is done and should be dry, not wet and sticky.

Pollo Guisado, Arroz Blanco y Amarillos

Esta semana me fui con un menú criollo bien Boricua en casa, arroz blanco con pollo guisado. Modestia aparte quedó para chuparse los dedos y el olor mientras lo vas preparando te transportará a esa época donde tu familia te complacía con ese pollito tan rico. Puedes acompañar el plato con unos plátanos maduros o tostones. En casa no sobró nada así que no te puedes perder esta receta. 

Ingredientes para el Pollo Guisado;

  • 2 lbs muslos de pollo
  • Adobo al gusto
  • ¼ taza de aceite
  • 3 papas para cocinar
  • 3 – 4 hojas de laurel
  • Sazón Goya con Azafrán
  • ¼ taza vino seco para cocinar
  • 1 cucharadita aceite de achiote
  • Cilantro al gusto
  • 4 cucharadas de aceituna
  • 2 latas salsa de tomate
  • 3 cucharadas de sofrito
  • 2 ½ taza de agua
  • Sal al gusto
  • Pimienta al gusto
  • ½ pimiento (cubanelle pepper) picado en lascas
  • Ajo en polvo al gusto
  • Orégano seco el polvo al gusto

Ingredientes Arroz Blanco;

  • 2 tazas de arroz grano largo
  • 4 tazas de agua
  • 1 cucharadita de aceite
  • 1 – 1 ½ cucharada de sal

Procedimiento Pollo Guisado;

Lo primero que vamos a hacer es adobar el pollo con al menos una hora de anticipación pero lo ideal es adobarlo 24 horas antes. Vamos a utilizar adobo criollo, pimienta, ajo en polvo y orégano seco para darle el sabor. Asegúrate que le pones a todos los muslitos y en todas partes.

Pelar y picar las papas. A mi me gusta cortar las papas en pedazos grandes. Poner las papas en agua con un poco de sal hasta necesitarlas. Cortar en lascas la mitad de un pimiento. 

En una olla profunda vamos a poner a calentar a fuego mediano el aceite de cocinar y vamos a agregar los muslos ya adobados, moviendo de un lado a otro. Esperar a que los muslitos se doren con el calor del aceite por todos los lados. Luego de unos minutos añadimos el sofrito, el sazón, el aceite de achiote y removemos. Incorporamos la salsa de tomate, el vino seco para cocinar, las aceitunas, el cilantro, las hojas de laurel, el pimiento, la papa y el agua. Cocinamos a fuego alto por 15 minutos. Removemos ocasionalmente.

Pasado los 15 minutos bajamos a fuego medio y probamos el sabor de la salsa. Añadir sal y pimienta al gusto de ser necesario. Cocinamos a fuego medio por 30 minutos moviendo en ocasiones. Cuando falten unos diez minutos bajar el fuego a bajo y tapar la olla. Listo ya tienes tu pollo listo. 

Procedimiento Arroz Blanco;

En una cacerola mediana poner cuatro tazas de agua a fuego alto. Agregar la sal y el aceite y esperar a que el agua hierva. Lavar el arroz crudo y llevarlo al agua una vez la misma esté hirviendo. Esperar hasta que el agua se evapore. Mover ocasionalmente. Cuando ya no quede mucha agua vas bajando el fuego a mediano y cuando se seque totalmente el agua bajar el fuego a bajo. Tapar la cacerola, a mi me gusta ponerle un pedazo de papel absorbente antes de ponerle la tapa para que agarre toda el agua que se va a ir condensando y evitar que el arroz te quede amogollado o esponjoso. Cocinar a fuego bajo por 15 minutos, luego removemos el arroz y volvemos a tapar por 15 minutos adicionales. Listo ya tienes tu arroz blanco. 

Como yo estoy utilizando arroz grano largo la proporción de agua es dos a uno, si vas a utilizar arroz grano mediano debe ser 1 ½ taza de agua por cada taza de arroz.
