Playing by the New Rules: How Four Women Are Changing Restaurant Culture in Puerto Rico

It’s no secret that the pandemic and lockdown have hit the restaurant industry hard. We have already talked about how things are now in this Russia. Today we’re talking about entrepreneurs who are saving their business on the other side of the globe in Puerto Rico, while also changing the local restaurant market by bringing farm and vegan establishments into fashion

Women run less than 7% of restaurants in the US, and in the number includes both chefs and restaurant owners. Today – regardless of the gender of the owners or the location of the restaurants – due to the Covid-19 pandemicestablishments around the world are facing unprecedented challenges. As of September 2020, 100,000 restaurants across America have closed temporarily or for extended periods, according to a study by the National Restaurant Association.

During the lockdown in Puerto Rico, another Western Hemisphere country, Forbes USA contributor Melissa June Rowley was able to dine around the island at several women-owned establishments and learn about how they ran businesses before and during the pandemic. the era of the coronavirus, when they had to close completely or operate at 25% capacity, which economically harms small restaurants more than it helps.

The Endless Rivalry

Quarantine hasn’t been too hard on Carla Ortiz, a classically trained chef and owner of bo.ka.do, a vegan restaurant located on La Plaza del Mercado in Mayaguez, Puerto Rico. Closed from March to June, the restaurant offered a limited selection of delivery and takeaway options and quickly returned to service, with Ortiz now having more private party customers than it did before the pandemic.

“I wasn’t afraid of losing customers [during lockdown] because I know that in times like these people are looking for alternatives to what they usually eat,” Carla says of her vegan menu. “We are starting to take care of ourselves more.”

A native of Puerto Rico, Carla left the island when she was eight and returned at 33 with $500 in her pocket. At that time, she had just divorced her husband and had to feed the children, so she founded bo.ka.do in her home. A few years later, she ended up at La Plaza del Mercado, where she gets her ingredients first hand.

“Farmers’ markets should be the soul of any community, especially in the city centre,” says Carla. — Bo.ka.do is much more than just a restaurant. This is me. This is the way. Life is a journey.”

Part of the journey is to be as creative as possible with food preparation. On this score, Karla says: “The fact is that I endlessly compete with myself, and this allows me to move on. I never follow fashion. I don’t watch what other people are doing. I walk into the kitchen or I go to a farmers’ market, I pick up something and I think, “How do I turn this root vegetable into a steak? Because my restaurant is not just for vegans, it’s for people who are exploring vegan food. The more exotic the better.”

Dreaming

In Old San Juan, Loyda Rosa is revisiting the way she operates her restaurant, Verde Mesa, a local and tourist hotspot that has remained closed since Puerto Rico went into lockdown in March.

Loyda, who was one of the first to look for organic food, is in no hurry to open her own restaurant. “It’s suicide to open up again and do what we’ve always done,” she says. “I need to open up with a new approach. No business can rise on my shoulders. It must evolve with me. It has to grow organically.”

After working at Verde Mesa for nearly 12 years, she noted many factors in Old San Juan that she believes have begun to discourage local customers from dining in town, such as parking tickets and the area’s dependence on tourism. This led to the fact that a number of businesses had to close during the quarantine.

To invest in Verde Mesa, Loyda worked as a waitress in a restaurant and sold jewelry. She wanted to do things her own way and offer the same organic food she bought herself a few miles from Old San Juan at a farmer’s market in Hato Rei when she was younger.

“I learned to dream,” says Loyda. “I thought, ‘Wow, this is such an amazing food, it’s so different from the supermarket stuff that Puerto Ricans eat at home.’

But the farmers she contacted couldn’t supply enough food for the restaurant. It didn’t stop her. She found a patio that she was allowed to use as a garden and began growing the first crop of Verde Mesa vegetables. Later, local farmer Efren Robles saw the difficulty she was facing in trying to procure enough vegetables and arranged for a group of local farmers to supply food to his farm so that he could supply restaurants in need with fruits and vegetables, and later cruelty-free meat. .

“Verde Mesa is more than just a business,” says Loyda. “It is more of a socially responsible organization. Our goal is to create and develop a new model of restaurant culture based on honor, imagination and beauty, and this proves that supporting local sustainable products is a true source of strength for humanity.”

Game Changer

Loyda’s ideals have much in common with the environmentally conscious mindset of Sarah Windover, owner of the Reina Mora Kitchen & Supple Club, located in the famous surf town of Rincón on Puerto Rico’s west coast. It started off as experimental dining two years ago, but the format quickly changed to a traditional farmhouse restaurant run by Sarah and her husband Alex, who moved to Puerto Rico from New York 10 days before Hurricane Maria struck the island in 2017.

“Our idea from the beginning was to use only local products,” says Sarah. – Here, on the island, this is rare, it is difficult to implement this, because 89% of food comes from the States or from other countries. We wanted to change this. What if everything we offered was 99% from this island? We had no idea if it would work or not. So we did a test series of dinners with ten close people, and then we had an organic increase in customers.”

Three days before Puerto Rico passed its 15th Executive Order, which imposed a number of restrictions on the island, including a ban on restaurants, Sarah and Alex had already made the decision to move to takeout because what to do right in relation to their community. In accordance with the latest executive order from the Governor of Puerto Rico, they are now hosting super clubs with 12 people in the restaurant at a time, while also offering takeaway food.

During the pandemic, one of Reina Mora’s biggest benefits was that the restaurant sourced all of its ingredients from local, organic firms, and its supply chain was unaffected.

“I think it helped our business too, because during the pandemic people wanted to know where their food was coming from,” explains Sarah. “We can tell you where each ingredient comes from and where it was grown.”

Every week, Sarah and Alex, who do not want to use the services of intermediaries, go to farmers’ markets in Aguadilla and Rincon. It is not uncommon for a couple to spend an hour on the road just to buy chocolate.

Find your own vision

Meanwhile, on the east coast of the island, in the resort of Palmas del Mar in Humacao, Cristina Angelica Colon is preparing to reopen her Italian restaurant Café de la Plaza in November. Like many other restaurant owners, she closed her establishment in March.

“We had to take care of the health and well-being of our employees, customers and friends,” says Christina. “The future belongs to those who make dining more comfortable, so our goal is precisely that.”

Like the restaurants mentioned above, Café de la Plaza strives to buy products from local producers as often as possible. The company owns a 20-hectare farm where a significant portion of the vegetables used by the restaurant are grown.

“During the season we could grow pumpkins, marrows and eggplants,” says Kristina. — I always try to buy products from local producers. We need to support our farmers. Agriculture and restaurants go hand in hand.”

Christina’s family was in the restaurant business, so she knew from childhood that she would work in this industry. At the same time, she dreamed of getting a law degree. So after a few years running the Café de la Plaza, she started law school in Miami, constantly flying to and from Puerto Rico to continue running the restaurant. These were difficult times. As well as the early days when she developed her business as a young entrepreneur.

“When I became a restaurant owner, I was not just a woman, I was also very young,” she recalls. “On the opening day, someone sent the police to the restaurant to check if I had all the necessary licenses. My licenses were hanging on the wall. Undoubtedly, people who want to stand out, to succeed, have to put in extra effort.”

Christina would like to see more diversity among the restaurateurs, but she sees the first signs of change. “There are new restaurant owners coming in, so I hope there will be even more in the next 5-10 years. There is a lot of room for innovation here.”
