Pasos de la receta
1) Lo primero que haremos para preparar este flan huevo al horno, será preparar el caramelo líquido (dejo el enlace en ingredientes) para cubrir el fondo de los moldes del flan.
2) Mientras se enfría el caramelo, ponemos a calentar la leche con la piel del limón, la esencia de vainilla y el azúcar. Removemos bien para disolver el azúcar y dejamos unos minutos para que la leche se aromatice. Colamos la leche y reservamos.
3) A continuación, cascamos los huevos en un recipiente amplio y los batimos. Cuando estén bien batidos, vamos añadiendo la leche poco a poco y sin dejar de batir.
4) Precalentamos el horno a 160º C, llenamos los moldes con la mezcla de huevo y leche. Cubrimos los moldes con papel de aluminio y los colocamos en un recipiente con agua caliente para cocinarlos a baño maría durante 40-45 minutos.
Pasado este tiempo, destapamos un flan y lo pinchamos con un cuchillo para ver si los flanes están listos. Si el cuchillo sale limpio significa que ya están.
Para enfriar los flanes, los colocamos en una bandeja con agua fría y unos cubitos de hielo, y los metemos en la nevera durante mínimo dos horas.
5) Para desmoldar los flanes de huevo, le pasamos con cuidado un cuchillo por todo el borde interior del molde y ponemos el molde boca abajo en el plato.
6) Y ya tenemos listo este flan de huevo, uno de los postres más tradicionales y ricos que podemos acompañar con un poco de nata montada.

Abrimos con un cuchillo la vaina de vainilla longitudinalmente, sacamos las semillas con la punta y las echamos sobre la leche que pondremos en un cazo. Añadimos también la vaina.

Ponemos a calentar en el fuego, retiramos y tapamos para que infusione bien.
3.
En un bol echamos los huevos y vamos batiendo con varilla mientras añadimos el azúcar y se blanquean.
4.
Una vez que la leche esté templada, sacamos las vainas de vainilla y vamos añadiendo, sin dejar de batir, a la mezcla de huevos y azúcar.
5.
Hacemos un caramelo con azúcar, agua y unas gotas de zumo de limón y cuando esté dorado lo echamos en una flanera grande o varias individuales por el fondo y las paredes.
6.
Llenamos con nuestra mezcla y cocemos en un baño maría al horno durante 60 minutos a 170ºC.
7.
Sacamos con cuidado, dejamos que se enfríe y metemos en la nevera hasta que vayamos a tomarlo que será cuando lo desmoldemos.

And yet, I will focus on the recipe with puff pastry …. exactly the same version of the Parisian flan that I had a chance to try during my last long stay in Paris in the spring of 2006. After that, for some time I tried to find a recipe for this delicate delicacy !!! And finally, on the Internet, I found THAT SAME recipe !!! ))
In fact, preparing this French dessert at home is not difficult . .. You just need to be a little patient when preparing the cream, the preparation process of which is in many ways similar to the preparation of custard, with the only difference being that we cook it on fire from the very beginning, Well, you can’t leave him unattended!
I will no longer distract you with a description of this dessert, but I suggest you try it yourself and treat your loved ones to it! My friends picked up such definitions for him as “looks like cream caramel ……., looks like panna cotta ………, looks like pudding ……. “)) One of my girlfriends last time described it as an “extraordinary dessert”))

1 vanilla pod (in extreme cases, Vanilin bag)

Let’s turn on the oven at 170 C. And start preparing the cream…
Put the yolks in a saucepan with a thick day and put on a very low fire. Start mixing the yolks.
Pour in the sugar and continue mixing with the yolks until the sugar is completely dissolved.
The egg mass will increase slightly in volume and become smooth.
Pour the sifted flour and potato starch into the yolks. Again, mix well with a whisk.
Now pour in milk at room temperature… followed by cream. We stir the cream all the time.
Cut the vanilla pod with the tip of a knife and remove the seeds. Put the seeds and the pod itself into the cream.
Add grated lemon zest…
Whisking constantly, bring the cream to a boil (all the time over low heat!) and boil for 10-15 minutes until it thickens and acquires a dense smooth consistency. Set aside the finished cream for a while.
Let’s move on to the base of the flan… To do this, take a layer of ready-made puff pastry (or your homemade. ..), lay out a 24 cm diameter mold with it (if you use ready-made dough, then along with baking paper, using your own puff pastry, grease form with butter and sprinkle with flour). Form a fairly high side, as there will be a lot of cream! Prick the dough with a fork so that it does not puff up too much during baking.
It remains to carefully transfer the cream into a mold and put in the oven to bake for about 1 hour (50 minutes).
It is normal for the top of the flan to brown during baking, the main thing is to make sure that it does not burn, of course! ))
Cool the finished flan and put it in the refrigerator to cool for at least 1 hour. After it, it will be easier to cut …)) Ready-made flan can be sprinkled with powdered sugar on top!

TIP: You can store the flan in the refrigerator for 3-4 days, covering it with cling film so that it does not absorb foreign odors… Or you can cut the flan into portions and freeze in the freezer. Then, if necessary, defrost by rearranging in the refrigerator.
And yet, if you wish, you can add pieces, “drops” of chocolate to the cream (previously roll them in flour …), but it’s better to try to use natural vanilla, in a pod …))
